Sous Chef Manuel Brau Torres, or Chef Manny, has been part of the Sweet Basil team since May of 2024.
Born and raised in Milwaukee, Wisconsin, Chef began his culinary training at the Milwaukee Technical College of Culinary Arts (MATC).
He began working in the fine dining restaurant world in Milwaukee and continued that career path once he moved to Colorado 3 years ago.
In the Colorado Front Range, Chef Manny was part of the opening teams of Noisette and Alma Fonda Fina as Sous Chef. He was also a Sous Chef Rioja Denver.
On his days off you can find Chef in the outdoors or getting a workout in.
